If a Carrot Cake and a Granola Bar had a baby...this would be it!
Chewy and naturally sweet and studded with shredded carrots, maple syrup, nuts and seeds galore. Not too sweet and farrrrr from dry. Held together with Chia and Mejool Dates.
And they require NO BAKING. So a #raw snack in your culinary game. You’re gonna love them!
Recipe::
1.5 cup oats, processed fine
1/2 cup unsweetened shredded coconut
4-5 Mejool dates, chopped
1/2 cup shredded carrots
1/2 cup chia seeds
1/4 cup orange zest
1/2 cup local honey
1/2 cup nut butter of choice
1 tsp vanilla extract
1/4 cup pecans, chopped fine
Black and white sesame seeds for topping

Spray or parchment line an 8x8 baking dish. Put aside.
Combine all dry ingredients (less sesame seeds) in a large mixing bowl.
In a small saucepan over medium heat, melt the honey (not the tablespoon), nut butter and vanilla until combined and when done turn off the heat. Pour honey mix over dry ingredients and combine. Immediately transfer to baking dish and squish down (with a spatula or lightly oiled hands) until mix is to edges and equally flattened. Brush with a little honey and sprinkle top with sesame seeds. Cover with plastic wrap and sit in fridge for at least 3-4 hours until firm. Lift from pan when ready and cut into bars of your desired size. Store in an airtight container for up to a week. Enjoy!
