Mountain Sausage Rolls with Apple Butter

These tasting treats are perfect for football weekend gatherings...of 1! 😂

Easy to make and amazingly delicious!! I call them “Mountain Rolls” because of the use of herbs and apple butter. Most Scottish rolls have mace and a different blend altogether. These make you feel like you’re on the AT 🤙🏽

Recipe::

1 lb ground pork sausage (thanks @landtotablefarm )

1 t salt

1/4 t black pepper

1/4 t ground coriander

Pinch of nutmeg

1 t ground thyme

1 T ground sage (or fresh, if you have)

1 T ground parsley

1 t crushed rosemary

1 egg, beaten with a touch of water

1 sheet of Puff Pastry

3-4 T Apple Butter

In a mixing bowl, combine ground pork and all seasonings except the apple butter.

On a lightly floured surface, roll out the pastry sheet to approximately 14x14 inches. Cut the pastry in half lengthwise. Down the center of each sheet spread 2 tablespoons of apple butter and on top of that form log of ground pork. Fold one side of pastry over and then meet the fold with the other side. It should look like a pastry snake, so to speak. Place the “snake” seam side down and cut into 3 inch pieces. Place on a parchment lined or silicone mat covered baking sheet. Brush tops and sides of each piece with the beaten egg. Sprinkle it with salt. Bake at 375 for about 25 minutes until puffed and golden on tops. You can serve these with more apple butter or a dash of hot sauce— I know you’ve got a bottle in that bag! 🤣
